Apple Chicken Salad
3 pounds chicken, cooked and
diced
4 ounces diced celery
4 ounces diced onion
1 cup mayonnaise (try light)
2 hard boiled eggs, peeled and diced
1 apple, diced
Mix all ingredients together.
Add eggs last so they don't crumble during mixing. Chill before
serving.
Serve alone, on a bed of
lettuce or inside a hollowed out large apple half.
