Apple Pancakes

2 1/2 cups flour
4 teaspoons baking powder
2 teaspoons sugar
1 teaspoon salt
1 teaspoon baking soda
2 eggs, room temperature
2 1/2 cups buttermilk, room temperature
3 tablespoons butter
2 medium Granny Smith appples, diced
1 - 2 teaspoons cinnamon

Melt the butter and set aside to cool. Sift together the flour, baking powder, sugar, salt and baking soda. Mix together the eggs, buttermilk and melted, cooled butter. Pour this mixture into the dry ingredients and mix. Do not over mix. Fry pancakes and serve hot.
