Apricot
Nut Bread
1 1/3 cups dried apricots, cut into small
pieces
1 3/4 cups sugar
3 tablespoons softened butter
2 eggs, beaten
1/3 cup water
3/4 cup orange juice
3 cups flour
3 teaspoons baking powder
1/2 teaspon baking soda
1/2 teaspoon salt
3/4 cup nuts, chopped
Soak apricots in warm water for 2-3
hours. Drain well.
Mix together sugar, butter, eggs water
and orange juice. Sift dry ingredients into a bowl and then add
to sugar mixture. Mix throughly. Fold in apricots and nuts.
Pour into loaf pan and bake at 350 degrees for 55
minutes.
