Breakfast Burrito

1 cup of eggs (5-7 eggs, depending on size)
1 medium sized potato, peeled and shredded
1 large tomato, diced
2 teaspoons finely chopped basil, or 1/2 teaspoon dried basil leaves
1/4 cup chopped onion
2 teaspoons butter
1/3 cup shredded cheddar cheese
4 tortillas
salt and pepper to taste
dab of sour cream

In a small bowl, combine the basil and tomato. Set aside.

In a frying pan, saute the potoes and onions in the butter until they are tender. Beat the eggs, and pour the eggs into the frying pan. Add pepper and stir utnil mixed.

Fill each tortilla with 1/4 of the egg mixture. Top with cheese and fold. Once folded put tomato and basil mixture on top. Add a dab of sour cream. Serve.
