Mold For Passover
1 pound, raw, grated carrots
1/4 cup raisins
1/2 cup sugar
1/2 cup matzah meal
3 tablespoons potato starch
1/2 cup red sweet wine
1/4 cup margarine
1 teaspoon cinnamon
1 teaspoon ginger
1 egg
1/2 teaspoon salt
juice of one lemon
grated peel of same lemon
In a small bowl, dissolve the potato
starch in the wine. Mix until dissolved.
In a large bowl, cream together the
margarine and matzah meal. Add the remaining ingredients,
including the wine mixture. Mix well and pour into casserole
dish. Bake at 350 degrees for about an hour. Cut and
serve.
