Carrot and Orange Soup
This is a very interesting recipe that
can be served both hot and cold.
2 cups broth. If you want your soup to be
vegetarian use vegetable broth. Otherwise use a clear
chicken broth
1 pound of carrots, grated
1 small onion, chopped
1 stalk of celery, chopped
1 medium potato, chopped
1/2 cup of orange juice
1 orange rind, grated
Pour broth into a soup pot. Simmer the vegetables in the broth
until the vegetable are tender, 30-45 minutes. Remove from
stove and add orange juice and orange rind. Put the soup
through the blender or food processor until smooth.
