Carrot Walnut Cake

3 cups flour, sifted

2 cups sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/4 teaspoon salt

2 teaspoons cinnamon

4 eggs

1 cup oil

2 large grated carrots

1/2 cup black walnuts, chopped

1/2 teaspoon vanilla


In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt and cinnamon. Mix well. In a smaller bowl, combine the remaining ingredients. Stir until thoroughly mixed.  Make a well in dry ingredients and combine the contents of the two bowls. Beat by hand until smooth. Pour into two (9 x 1 1/2 inch) round pans.  Bake in preheated 350 degree oven for 35 minutes.

Note: if you don't like nuts, just omit the walnuts
