Cashew Asparagus Beef
1 pound flank steak, cut into 1/8 inch strips, cut across grain 1/2 teaspoon salt 2 teaspoon cornstarch 3 teaspoon soy sauce 1 pound fresh asparagus, cut into 1 inch diagonal pieces 2 small onions, cut into 1/4 inch slices 2 cloves garlic, smashed 1/4 cup oil 1 teaspoon soy sauce 1/2 teaspoon sugar 2 tablespoons bean sauce 1/2 cup cashews
Mix salt, cornstarch and 3 teaspoons soy sauce in bowl. Add meat to coat. Heat 2 tablespoons oil in large frying pan. Add garlic and cook until pale brown. Remove from pan. Add meat and stir fry until brown. Remove with slotted spoon to a bowl. Add 2 tablespoons oil, and when oil is hot, add onions and bean sauce. Saute a few minutes. Add asparagus, sugar and 1 teaspoon soy sauce. Cover and cook a few minutes, until asparagus is tender.
Add meat and stir just long enough to reheat. Add cashews and stir fry just long enough to mix through. Serve immediately.
