Chickekn Adobo

2 boneless chicken breasts
2 cloves of garlic, crushed
1/4 teaspoon fresh ground black pepper
1/2 onion, sliced
1/2 cup soy sauce
3/4 cup white vinegar
1/2 cup whater
2 bay leaves
olive oil

On med/high heat, brown chicken in olive oil, garlic and pepper. Add remaining ingredients and bring to low boil. Let seit until sauce is reduced to half, then add 2 bay leaves and simmer for 5 minutes. Serve with white rice.
