Chicken Chow Mein
1 pound raw chicken, thinly sliced 4 cups chow mein noodles 1 cup sliced mushrooms 1 cup diced celery 1 cup chicken stock 1 cup bean sprouts 1/2 cup sliced water chestnuts 1/2 bamboo shoots 2 1/2 tablespoons soy sauce 2 tablespoons vegetable oil 2 tablespoons cornstarch mixed with 3 tablespoons water 1 teaspoon sugar 1/2 teaspoon salt
In a large skillet, fry chicken in vegetable oil until almost done (about 4 or 5 minutes). Add celery and cook until tender, another 3 or 4 minutes. Add remaining ingredients except cornstarch mixture. Bring to a boil. Stir in cornstarch mixture to thicken. Serve over chow mein noodles.
