Chicken with Orange Sauce
3 large chicken breasts,
boneless and skinless
1 1/2 cup orange juice
1/4 cup butter
2 tablespoons flour
2 tablespoons sugar
1 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon cinnamon
1/8 teaspoon ginger
Sprinkle the salt on the
chicken. Set chicken aside. In skillet, brown the butter. Add
the flour, sugar, salt, mustard, cinnamon and ginger. Stir
until they are a smooth paste. Slowly stir in orange juice.
Stir until mixture boils. Add chicken and simmer for one
hour.
