Chicken Tortilla Soup
2 chicken breasts, cooked and
cubed
1 onion, finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
4 cups chicken broth
1 clove garlic, crushed
3 tomatoes, chopped (remove skin)
2 tablespoons vegetable oil
1 green chile, seeded and chopped
Shredded cheese
tortillas, cut in strips and fried
Sautee
onions and garlic until soft. Combine all ingredients in pot
and cook at least 30 minutes. When serving, add shredded cheese
and tortilla strips.
