Chicken Waldorf Salad
2 chicken breasts, cooked,
chilled and cut into small cubes
1 large, or two small red apples, cored (leave skin on), cut
into small cubes
2 cups diced celery
2 cups diced jicama (peeled)
1/2 cup raisins
Dressing 1 cup plain yogurt
3 tablespoons mayonaise
2 teaspoon vanilla extract
1/2 teaspoon ground allspice
Combine the salad ingredients
in bowl. In a seperate bowl combine the dressing ingredients
and mix. Add dressing to salad and mix well. Chill several
hours before serving.
For a lower calorie version
of this recipe, try nonfat yogurt and either lite or non fat
mayonaise.
