Chicken
with Mushroom and Orange Sauce
6 chicken breasts
1/2 cup flour
1/4 teaspoon paprika
1/4 teaspoon white pepper
1/4 teaspoon sat
1/4 teaspoon thyme
1/4 teaspoon sage
1/4 teaspoon parsley
1 stick butter, melted
2 cups fine bread crumbs
1 cup sliced mushrooms, sauteed in butter
1/2 cup orange juick
1 teaspoon orange rind
Combine the flour with all of the
seasonings. Dredge the chicken in the seasoning mixture, then
in the melted butter, then coat with the bread crumbs. Bake at
400 degrees for about 40 minutes.
Combine 2 tablespoons flour and 2
tablespoons butter. Melt in a pot for about 2 minutes. Add the
orange juice and orange rind. Heat over low heat until thick.
Add sauteed mushrooms. Pour sauce over cooked chicken and
serve.
