Cranberry Bread
3 cups flour
1 cup sugar
1/2 cup shortening
3 eggs
1 cup plus 2 tablespoons orange juice
1/2 cup cranberries, chopped
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup chopped walnuts (less to taste)
Blend sugar, shortening and
eggs. Stir in orange juice and cranberries. Sift together the
flour, baking powder, baking soda and salt. Stir into cranberry
mixture. Gently mix in nuts. Spoon into either loaf pans or one
pound coffee cans. Bake for 50 minutes at 350
degrees.
