Cranberry Brisket For the Crockpot
1 - 3-5 pound brisket 1 - 16 ounce can whole berry cranberry sauce 2 large onions, chopped 4 cloves of garlic, minced 2 carrots, chopped 2 stalks of celery, chopped 3 tablespoons oil salt and pepper to taste
In a skillet, heat 2 tablespoons of the oil. Add the onions, carrots, garlic and celery and cook about 7 minutes, or until soft. Remove the skillet from the heat and add the cranberry sauce. Mix. Pour into crockpot.
Salt and pepper the brisket. Put the remaining 1 tablespoon of oil in the skillet and heat the brisket until brown on all sides. Pour brisket and any pan drippings into the crockpot. Cook on low 7-8 hours. Brisket should be fork-tender.
