Cranberry Chicken
1 fryer, cut into 8 piece 1 cup flour 1 teaspoon salt 1/2 teaspoon paprika 1/2 teaspoon pepper 1/2 small onion, minced 2 tablespoons butter 1 1/2 cup pineapple juice 1 cup cranberries 1/4 cup sugar 1 1/2 tablespoons cornstarch 1 1/2 tablespoons water
Mix together the flour, salt, paprika and pepper. Roll chicken in flour mixture. Brown the chicken and onion in butter. Place chicken in casserole dish. Add pineapple juice. Bake, covered, at 350 degrees for 30 minutes. Add cranberries and sugar. Mix cornstarch and water and pour over chicken. Bake uncovered for 20-30 more minutes, until chicken is done.
