Cranberry Fruit
Salad
1 can (8 ounce) crushed
pineapple, packed in juice. Drain and reserve juice.
1 package (small) raspberry jell-o
1 can whole berry cranberry sauce
1/2 cup chopped celery
1/2 cup water
1/2 cup chopped walnuts (optional)
2 tablespoons lemon juice
Pour pineapple in a bowl. In
a saucepan, mix together reserved pineapple juice, water, and
lemon juice. Bring to a boil. Remove from heat and add jell-o.
Stir until jell-o has dissolved. Break up cranberry sauce with
a fork and stir into jell-o mixture. Refrigerate until mixture
begins to set. Stir in pineapple, celery and walnuts. Mold.
Chill until firm.
