Fish Balls or Mock Gefilte Fish
3 eggs
1 small can chunk style, light meat tuna
1/2 teaspoon salt
1/2 cup plus one tablespoon saltine crackers
1 teaspoon onion powder or 1 teaspoon minced onion
1/8 teaspoon pepper
To Boil In the Pot
2 medium onions
2 carrots
1/2 teaspoon salt
dash of white pepper
3 cups water
Beat eggs in a bowl. Add tuna and mix well. Add 1/2 teapsoon
salt, the crackers, the onion powder and the 1/8 teaspoon
pepper. Mix very well. Cover and put in refrigerator at least 4
hours.
In a large roomy pot, slice
the carrots and onions. Add water, 1/2 teaspoon salt and dahs
of pepper. Bring to a boil. When almost boiled, make fish balls
and add them. Covery tightly. Lower flame and cook about 45
minutes. Uncover and cook another 45 minutes.
Refrigerate.
