Fruit and
Brisket
2 to 3 pounds brisket
1 - 12 ounce can of beef
1 cup dried pitted pruned
2 onions sliced into rings
1 cup dried apricots
2 tablespoons orange marmalade
3 tablespoons brown sugar
1 tablespoon grated lemon peel
juice from one lemon
1 tablespoon brandy
3/4 teaspoon ginger
1/2 teaspoon pepper
1/2 teaspoon worcestershire sauce
1/2 teaspoon cinnamon
Note: If I don't have beer in the
house, I'll use a diet soda. I also seldom have brandy in the
house, so I just skip it.
Line cooking pan with foil. Place 1/2 of
the onion rings on the bottom. Place the washed brisket on top
of the onions. Place remaining onions on top of
brisket. Seal foil and cook for 3 hours at 350
degrees.
In a large saucepan, combine the
remaining ingredients. Bring to a boil over medium heat. Open
foil on brisket at the end of the 3 hours and pour the
sauce over the brisket. Reduce heat to 300 degrees and cook one
more hour.
