Fruity Yams
2 pounds of yams, peeled and sliced thickly 1 cup pineapple tidbits (reserve juice) 1 apple, cored and chopped 1/2 cup raisins 1 tablespoon butter 1 cup onion, thinly sliced 3/4 cup pineapple juice 2 tablespoons brown sugar, packed 1/2 teaspoon salt
Combine yams, pinapple and apple in a casserole dish. Sprinkle raisins over mixture.
In a frying pan, melt butter. Add onion and cook until onion is soft and golden, over a medium fire.
Measure reserved pineapple juice. Add additional pineapple juice until you have 3/4 cup. Stir pineapple juice into onions. Add brown sugar and salt. Cook until sugar melts. Pour mixture over yams and raisins. Cover with foil and bake at 350 degrees about an hour.
