Grapefruit Salmon
4 pieces of salmon 1 cup fresh grapefruit juice and segments 1/2 cup chopped onions 1 tablespoon olive oil
Heat olive oil in large skillet over medium heat. Add onions and cook until tender. Add grapefruit juice and segments, mix and add salmon pieces. Reduce heat, cover and cook 7-9 minutes, or until fish is done. Place salmon on plates and pour sauce over the fish.
