Green Bean and Mushroom
Casserole
8 ounces canned
mushrooms
6 ounces chicken stock
30 ounces canned green beans (drain)
3 tablespoons flour
2 tablespoons diced onions
2 tablespoons grated parmesan cheese
1/3 cup white wine
1/4 cup breadcrumbs
2 tablespoons melted butter
salt and pepper to taste
Drain mushrooms, reserving liquid. Slice mushrooms. Pour liquid
into meauring cup and add chicken stock to make 1 cup. Sautee
onions in butter. Blend in flour. Add liquid mixture and wine.
Bring to a boil. Mixture should thicken. Add cheese, salt and
pepper. Add mushrooms and green beans. Pour mixture into a
casserole dish. Mix bread crumbs and melted butter, and pour
over casserole. Bake at 375° for about 30
minutes.
