Healthy, Hearty Soup
2 cups whole wheat elbow
pasta
1 can beans (pinto, red kidney, white northern)
1 package of frozen broccoli
1 package of frozen corn
1 large onion
2 tablespoons minced garlic
1 teaspoon olive oil
1 can of diced tomatoes (low sodium)
salt and pepper to taste
1. Dice onion. Add onion, garlic, and olive oil into a pot (the
one you will use to cook the soup in). Saute onion.
2. Cook pasta as directed in a seperate pot. (do not overcook
pasta!)
3. Add broccoli, corn, tomatoes (with juice), and beans to
onion mixture.
4. When the vegetable mixture is thouroughly heated, add the
cooked pasta.
5. Add salt and pepper to desired taste.
6. Serve warm!
