Herbed Stuffed Salmon

4 portions fresh salmon (or thawed)
3 cloves garlic, minced (or 1 tablespoon)
1/4 cup chopped fresh parsley
1 cup all-purpose flour
1 teaspoon salt
1 pinch pepper
1/2 cup canola oil

In a skillet or frying pan, heat oil on medium. In a wide, shallow bowl, mix togther flour, salt and pepper. set aside. Using a filet knife, cut "pockets" into salmon portions lengthwise. Using about a quarter each of garlic and parsley, insert into pockets of salmon,spreading end to end and press closed. Allow to sit for about 2-3 minutes. Dredge one salmon portion in flour mixture and fry immediately. Cook 3-5 minutes and turn for an additional 3-5 minutes or until cooked through. Repeat until all portions are cooked, draining on paper towels. Serve warm.

Side dish suggestions: rice and a small salad compliment this dish exceedingly.
