Matzah-Apple Kugel
6 matzah boards
6 large apples
8 tablespoons of butter or margarine
8 eggs mixed with 4 tablespoons or waters
1 1/2 cups of raisins (I prefer the gold raisins)
2 teaspoons of cinnamon
1/2 teaspoon of salt
dash of nutmeg
Juice of 1/2 lemon
grated rind of 2 lemons
In a bowl, break the matzah into pieces.
Add water to the bowl, let the matzah soak in the water for one
minute to soften.
Cut the apples into bite sized pieces.
You can store the apple in salted water to stop it from
browning. Drain the apples and add the raisins, salt, nutmeg,
sugar, butter, lemon juice and lemon rind. Mix with the
matzah and apples. Add the eggs and mix again. Bake in a
casserole dish for 50-60 minutes at 350 degrees.
