Matzah
Vegetable Lasagna
6 pieces of matzah, regular or whole wheat
1/2 cup milk
1 pound of cottage cheese
8 slices of cheddar cheese
8 ounces of shredded mozarella cheese
2 eggs
1 - 32 ounce jar of marinara or spaghetti sauce
2 cups of chopped spinach or broccoli
In the bottom of a casserole dish, spread 3 spoons of
spaghetti sauce. You'll work this casserole in layers.
Dip the matzah in milk. Make sure both sides of matzah are
coated with milk. Place coated matzah on top of the spaghetti
sauce.
Pour a bit of sauce of the matzah layer.
Mix together the cottage cheese and eggs and put this layer
on next. The cheddar cheese is the next layer. Place your
vegetables over the cheddar cheese.
Dip the remaining matzahs in milk and place on top of the
cheddar cheese. Finish off with the remaining sauce. Cover and
bake at 400 degrees for 30 minutes.
Remove from oven and sprinkle the mozarelle cheese on top.
Return oven, uncovered and bake until cheese is
bubbly.
