Matzah Kugel
6 matzahs
3 eggs
3/4 cup sugar
1 and 1/2 large apples
3/4 teaspoon salt
3/4 cup white raisins
3/4 teaspoon cinnamon
3 tablespoon melted butter
a dash of lemon rind
Break matzahs and soak in water. When soft drain off excess water. Beat
eggs. Dice apples. Add all ingredients to matzo and mix well. Pour into greased baking dish. Sprinkle a
bit of cinnamon on top. Bake at 350° for 45-50 minutes.
