Mini-Pizza Bruschetta
1 loaf italian type bread
2/3 cup olive oil
4 cloves of garlic, peeled
2 cups tomato sauce
4 cups mozzarella cheese
1 cup fresh chopped basil
Cut bread into into 1/2 inch
slices. Brush each slice of bread with olive oil. Toast bread
slices under the broiler until golden brown.
Rub warm bread with garlic
cloves. Drizzle with oil and spoon two tablespoons of tomato
sauce on each slice. Sprinkle with cheese.
Place under broiler for 4 or
5 minutes. Cheese should be bubbly. Sprinkle basil on top and
serve immediately.
