Mushroom and Zucchini Frittata
7-8 eggs, beaten
3 tablespoon oil
1 cup fresh mushrooms, sliced
2/3 cup minced green onions
1/3 cup minced fresh parsley
2 cloved garlic, mashed
3/4 cup cheese (try parmesan or swiss)
1/2 teaspoon basil
1/2 teaspoon salt
1/8 teaspoon pepper
Heat oil in a large skillet
and saute zucchini, mushroom, onions, parsley and garlic in it
until well softened. Combine in a bowl with eggs, cheese,
basil, salt and a dash of pepper. Pour into a greased 9" square
baking pan and bake in a 350 degree oven for 20 to 25 minutes
or until set. Serve hot or cold. Serves 4.
