Orange Chicken
4 boneless skinless chicken
breasts
1/4 cup orange juice
2 tablespoons orange marmalade
1/2 teaspoon grated fresh ginger
1/2 teaspoon salt
1/8 teaspoon pepper
2 oranges, peeled and sectioned (will be added at the very
end)
Spray a baking pan with
cooking spray. Place the chicken in the baking pan in a single
layer.
In a bowl, combine the orange
juice, orange marmalade, ginger, salt and pepper. Pour sauce
over chicken. Cover and bake for 40 minutes at 425 degrees.
Baste the chicken with sauce, uncover and cook an additional 10
minutes. Remove chicken from pan, add orange slices, stir to
warm orange slices and then pour sauce over chicken. Serve
immediately.
