Orange Glazed Sweet Potatoes

6 medium sized sweet potatoes
1 cup of orange juice
2/3 cup sugar
2 tablespoons butter
1 teaspoon cornstarch
1 teaspoon salt
1/2 teaspoon grated orange peel

Pare the sweet potatoes. Cut each lengthwise in half. Arrange the potatoes in a casserole dish.

In a saucepan, stir stir together the sugar, orange peool, salt and cornstarch. Slowly add in the orange juice, stirring as you add the juice. Add the butter and stir. Cook until mixture boils and thickens, stirring constantly. Once boiled, stir and cook one more minute. Pour the orange sauce over the sweet potatoes and cover. Bake one hour in a 400 degree oven. Baste a few times during cooking.
