Orange Nut
Muffins
1/2 cup butter
1 cup sugar
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup sour cream
1 teaspoon grated orange rind
1/2 cup raisins
1/2 cup walnuts
1 medium sized orange
1 cup sugar
Cream together the butter and 1 cup
sugar. Combine the flour, baking soda and salt. Alternate
adding dry ingredients and sour cream to the butter and sugar
mixture. Mix in the orange rind, raisings and nuts. Batter will
be stiff. Pour batter into muffin tins, fill almost full. Bake
at 375 degrees 12-15 minutes. Watch carefully as they burn
quickly.
Squeeze the orange to make 1/2 cup juice.
Combine with the 1 cup sugar. After the muffins come out,
drizzle the orange juice mixture over the muffins.
