Orange Shortbread Cookies

2 sticks of butter, cold and cut into chunks
1/2 cup sugar
2 cups flour
3 tablespoons chopped orange zest
dash of salt

Place butter, sugar and orange zest in a bowl. Mix with electric mixer on low speed for 15 seconds. Add flour and salt. Continue mixing on low speed for 3-5 minutes. It will look dry just before coming together. Place the dough on a lightly floured board. Roll 1/4 inch thick.

Cut dough with a 3 inch cutter. Place on cookie sheet. Chill for one hour. Preheat oven to 250 degrees. Bake directly from the refrigerator, about 45 minutes. Bottoms should be golden, tops should remain white.
