Passover Brisket
This dish can be served year
round. It contains no bread products and so is a wonderful
passover recipe.
6 pound brisket
vegetable oil for sauteing
1 yellow onion, sliced
4 carrots, sliced
3 potatoes, quartered
1 cup of water
1 tablespoon of brown sugar
dried prunes
dried apricots
Heat the oil in a large
roasting pan. Saute the onions about 3 minutes. Add the meat
and brown on all sides. Add the water and brown sugar. You can
add additional brown sugar on top of the meat. Simmer about 2
hours. Add the fruits and vegetables and simmer an additional 3
hours for a total of 5 hours cooking time. Add more water as
needed.
Add additional fruits or
vegetables to your liking.
