Pineapple Chicken
2 -13 ounce cans pinapple
chunks
1/4 onion, sliced
1/3 teaspoon soy sauce
2 tablespoons lemon juice
1 tablespoon corn starch
1/2 teaspoon mustard
1 green pepper

Brown chicken. Add salt and
pepper to taste. In skillet, brown onion for 3 minutes, then
add pineapple syrup and lemon juice. Simmer. In small bowl,
combine cornstarch, soy sauce and mustard. Add to liquid. Cook
until clear and thickened. Add to chicken. Simmer 30 to 45
minutes. Five minutes before serving, add green pepper slices
and pinapple chunks. Use liquid as a sauce.
