Pineapple
Glazed Carrots
6 carrots, peeled
8 ounce can of pineapple tidbits
1/2 cup brown sugar
2 tablespoons butter
1 tablespoon grated orange rind
1/2 teaspoon salt
1/4 teaspoon cinnamon
Cut carrots into 1 1/2 inch pieces. Place
in a pot with a small amount of water. Cook until tender. Drain
out the water and add in the remaining ingredients. Cook over
medium heat tossing occasionally until glaze forms. Serve
immediately.
