Pineapple Nut Bread
2 1/2 cups sifted flour 1 tablespoon baking powder 1/2 teaspoon baking soda 1 teaspoon salt 1/2 teaspoon cinnamon 2 tablespoons butter, softened 1 1/4 cups sugar 3 eggs 1 tablespoon lemon juice 2 cups crushed pineapple with juice 1/2 cup chopped nuts
Sift together flour, baking powder, baking soda, salt and cinnamon. Cream together the butter and sugar. Beat in eggs. Stir in lemon juice, pineapple, pineapple juice and nuts. Mix well. Pour in sifted dry ingredients and mix until moistened. Pour into a greased loaf pan and bake at 375 degrees for one hour.
