Potato Kugel
4 pounds of potatos
1 large onion (we've used both white and red)
2 large eggs, whisked
1 teaspoon salt
6 tablespoons melted butter
2 tablespoons flour or matzah meal
Grate the potatoes and onion
into a large bowl. Drain the excess water. In a seperate bowl,
mix the salt, butter, flour and the whisked eggs. Pour
into pototo and onion mixture and mix well.
Grease a 9x13 baking dish.
Pour mixture into dish. Bake at 400° for 15 minutes. Reduce
oven to 375° and bake an additional 45 minutes.
If you are serving this to
guests, try using a muffin pan and making individual servings.
Adjust the cooking time for the smaller servings.
