Rice and Cranberry Dressing
1 cup of brown rice 3/4 cup dried cranberries 3/4 cup chopped onion 3/4 cup chopped celery 1/4 cup shredded carrot 1/2 cup pecans, toasted and chopped 1/4 cup chopped parsley 1 tablespoon butter 3/4 teaspoon poultry seasoning 1/4 teaspoon pepper
Prepare rice according to package directions. If you want a chicken flavored rice, use clear chicken soup instead of water when making the rice.
Put the cranberries in a bowl and cover with hot water. Set aside.
In a pan, melt the butter and saute the onions, carrots and celery until tender. Add remaining ingredients. Drain cranberries and add to mixture. Add in cooked rice and mix well. Serve hot.
