Salmon Casserole
1 - 15 ounce can of salmon, drained and flaked 4 eggs 5 zucchini, sliced in 1/8" widths 2 cups shredded cheddar cheese 1 3/4 cup Bisquick 1 1/4 cup onion, chopped 2/3 cup vegetable oil 1 1/2 teaspoons dried oregano leaves 1 teaspoon salt 1/2 teaspoon pepper (or to taste)
Beat eggs. Grease a 9x13 dish. Mix everything except zucchini in a bowl. Add zucchini and lightly mix in. Pour mixture into pan and bake uncovered for about 45 minutes at 375 degrees.
