Skillet Zucchini

6 small zucchini, cut into 1/4 inch round slices
1/4 cup vegetable oil
1 onion, diced (I tend to buy the packages of already diced onions)
1 teaspoon salt 
1/8 teaspoon pepper
2 tomatoes, diced
1/4 cup water
1/3 cup shredded cheddar cheese 
1 1/2 teaspoon soy sauce

Heat oil in a skillet. Add everything except the soy sauce and cheddar cheese. Cover and cook 10 minutes. Sprinkle with cheese and soy sauce. Cover and cook 2 minutes longer or until cheese melts.

I love to combine zucchini and yellow squash and mix as above. You can use light cheddar cheese and light soy sauce for a healthier alternative.
