Sour Cream Coffee Cake

2 cups flour
1 cup white sugar
1 cup sour cream
2 eggs
1/2 cup chopped nuts (optional)
1/2 cup butter
1/4 cup brown sugar, packed
1 apple, peeled and chopped
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
1/8 teaspoon salt

Sift together the flour, baking soda, baking powder and salt. In a seperate large bowl, cream together the butter and white sugar. Add the eggs and vanilla and mix well. In your butter and sugar bowl, alternately add the flour mixture and the sour cream, beating well after each addition.

In a seperate bowl, mix together the nuts, cinnamon, brown sugar and apple pieces. Pour half the batter into a bundt pan. Then pour in half the apple mixture. Pour in the remaining batter and top with the apple mixture. Bake at 350 degrees for 45 minutes or until done.
