Spinach Bake
8 ounces spinach fettuccine
noodles, cooked according to package directions (omit salt)
1 cup fresh mushroom slices
1 green onion, chopped
1 garlic clove, minced
1 - 10 ounce package frozen spinach (or 5 cups chopped fresh
spinach)
1 container ricotta cheese (low fat)
1/4 cup milk (low fat)
1/4 cup shredded swiss cheese
1 egg
1 tablespoon water
1/2 teaspoon nutmeg
1/2 teaspoon pepper
In a skillet, cook the
mushrooms, green onion and garlic until mushrooms are soft. Add
spinach and water and cook another 3 minutes.
In a bowl, mix together the
ricotta, milk, egg nutmeg and pepper. Add noodles and veggies
and toss to coat. Pour mixture into casserole dish. Sprinkle
with swiss cheese.
Cook about 30 minutes at 350
degrees.
