Stuffed Mushrooms
12-15 large mushrooms
2 tablespoons butter
1 tablespoon oil
2 tablespoons chopped shallots
3 tablespoons finely minced onion
3 tablespoons bread crumbs
1/2 cup grated swiss cheese
1/2 cup parmesan cheese
4 teaspoons chopped parsley
1/2 teaspoon tarragon
2/3 tablespoons heavy cream
salt and pepper to taste
Wash mushrooms and remove
stems. Chop stems and set aside. Place mushrooms hollow side up
in baking dish. Brush with melted butter. Sprinkle with salt
and pepper.
Saute butter, oil, shallots,
onions and mushroom stems. Remove from heat and add bread
crumbs. Add cheeses, parsley, tarragon, salt and pepper. Add
cream slowly to thicken. Stuff mushrooms with mixture and
sprinkle with swiss cheese and melted butter. Bake at 375° for
15-20 minutes.
