Sweet Potato and Spice Casserole
2 cups cooked and mashed sweet potatoes 3 eggs, beaten 1 cup warm milk 1/2 cup ricotta cheese 1 1/4 cups toasted sunflower seeds (I never use this much) 1 1/2 teaspoon cinnamon 3/4 teaspoon allspice 1/2 teaspoon nutmeg 1/2 teaspoon cloves 2 tablespoons honey
Beat eggs and milk together. Stir into mashed sweet potatoes. Blend well. Mash the mass of ricotta cheese. Stir in seeds and spices. Add this mixture to the yams and blend. Add honey. Pour into greased casserole dish and bake at 350° for 25 minutes.
