Sweet Potato Casserole

6 sweet potatoes
1 cup sugar
1 cup water
1/2 stick of butter
1 teaspoon vanilla

Peel sweet potatoes. Slice lengthwise, cutting each potato into thirds. You should have 18 pieces. Line an 11x14 inch pan with potatoes. In a pot, combine water, sugar, butter and vanilla. Bring to a boil. Pour the syrup over the potatoes and bake in a 350 oven about one hour. You want the syrup to carmelize.

Note: You can add a bit of cinnamon to the top for color and flavor.
