Pineapple Muffins

4 eggs
4 cups of flour
1 1/2 cups of crushed pineapple, drained
1 1/2  cups of skim milk
1/2 cup of sugar
1/2 cup of melted butter
2 tablespoons of baking powder
1 teaspoon of salt

In a bowl, sift together the dry ingredients.

In a seperate bowl, beat the eggs. Add the milk and melted butter and stir until smooth. Add this mixture to the dry ingredients. Add the pineapple and mix thoroughly.

Spoon into greased three inch muffin pans, filling three quarters full.

Bake at 425 degrees for 20 minutes or until done.
