Chocolate Chip Peanut Butter
Cookies
1 1/4 cups
flour
1/2 cup creamy peanut butter
1/2 cup sugar
1/2 cup brown sugar, packed
1/2 cup chopped peanuts
1 egg
2 cups chocolate chips (most recipes call for semi sweet, I
personally much prefer milk chocolate)
3/4 cup butter, softened
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
Combine flour,
baking soda, salt and cinnamon in a small bowl. Set aside. In a
large bowl, mix together the butter, sugar, brown sugar and
peanut butter. Mixture should be creamy. Add in egg and vanilla
and mix well. Slowly add in the flour mixture beating after
each addition. Add the peanuts and chocolate and gently stir in
by hand.
Drop by rounded
tablespoon onto ungreased cookied sheet. Press down just
slightly. Bake at 375 degrees for 7 to 10 minutes. Edges should
be done. Middle will be soft. Allow to cool a few minutes and
then transfer to a wire rack to cool completely. Should make
about 3 dozen depending on size of cookies.
