Simple
Summer Potato Salad
2 (1lb 4oz) packages - red potato
wedges
1/2 cup chopped celery
1/2 cup chopped onion
1 cup mayonnaise
6 large hardboiled eggs, peeled
1/2 tablespoon Italian Herb Seasoning Blend
1 tablespoon Dijon Mustard (optional)
Place 1 cup water in Base of
Tupperware Oval Microwave Cooker; layer one package of potatoes
in Shallow Colander; place second package in the Deep
Colander.
Cover and microwave on high for 8-10 minutes until
potatoes are fork tender. Use the Tupperware Quick Chef with
stainless steel blade to chop onion and celery first, then chop
eggs; set aside in Thatsa Bowl Jr.
Add coooled potatoes and remaining ingredients and gently fold
together using a spatula. Seal and refrigerate until serving
time.
